Sausages, Peas and Onions
- 2 lbs. sausage
- 2 onions, sliced
- 1 lb. peas (or 2 green peppers, chopped)
- 2 tbsp. oil
- 2 tbsp. water
What To Do:
1. Bake whole sausages for about 20-25 minutes at 350 degrees.
2. On medium heat, add oil, water and onions. (If you are using green peppers instead of peas, add them now too.) Cook the onions until they are translucent.
3. Cut the sausages diagonally and add to the pan. Mix together.
4. Add the peas at the last minute so they still have some crunch. Mix together. Cook for about 5 minutes.
5. Serve over brown rice.
Note: If you are entertaining, make some mashed potatoes. Line a cupcake tin with the cupcake papers. Scoop the mashed potatoes in the cupcake papers. Dice the sausages, onions and green peppers. Cook as instructed above and then embed them on top of the potatoes. This makes it easier to eat and mingle. It's also good for portion control.
Instead of mashed potatoes, you could also mash plantains in the cupcake holder. Remove them (still in the shape of the cup). Fry them. Put them back in the cupcake tin and top with the sausage mix.
